Only thing is the folks doing craft are there before the crew arrives and are the last ones to leave after a day's shoot. Some are very professional, well organized and cater to vegan diets etc... The workload is hard on bigger productions since a film crew will typically do a 12 hour plus day. If you hire someone off the street apart from the obvious health no-nos, you cant be sure they will show up.
